My Favorite Labor Day Recipes
Whether your long weekend of leisure will be spent catching rays at the local beach, tapping toes at the nearest music festival or reeling in fish at a well-stocked lake, one thing is certain: Labor Day is best when celebrated outside. What could be more American on this Labor Day than an outside picnic or backyard BBQ party?
California Grilled Veggie SandwichIngredients:
1/4 cup mayonnaise In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator. Preheat the grill for high heat. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer the with vegetables. Enjoy as open faced grilled sandwiches. |
Crispy Sesame Fried ChickenIngredients: 1/2 (3 pound) whole chicken, deboned and cut into bite size pieces1/2 teaspoon ground black pepper salt to taste 1 teaspoon garlic powder 1 cup rolled oats 1/4 cup toasted sesame seeds 1 tablespoon chicken bouillon powder 1/4 teaspoon monosodium glutamate (MSG) 1/4 teaspoon curry powder 3/4 cup white rice flour 1/4 cup cake flour 1/2 teaspoon salt 3/4 cup chicken stock 1 teaspoon onion powder 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 2 quarts vegetable oil for frying Coat chicken with 1/2 teaspoon black pepper, salt, and garlic powder. Chill for 4 hours. In a medium bowl, mix together oats, sesame seeds, 1/2 teaspoon salt, chicken granules, and monosodium glutamate. Set aside. In another bowl, combine rice flour, cake flour, 1/2 teaspoon salt, onion powder, basil, oregano, and chicken stock. Dip the bite size chicken into the chicken stock mixture, and roll in sesame seed mixture. Heat oil to 365 degrees F (185 degrees C). Fry the chicken till golden. |
Deep South Fried ChickenIngredients: 1 cup shortening Heat the shortening in a large, cast iron skillet over medium-high heat. In a brown paper lunch bag, combine the flour, salt, and pepper. Shake two chicken pieces in the bag to coat, and place them in the skillet. Repeat until all of the chicken is coated and in the skillet. Fry the chicken over medium-high heat until all of the pieces have been browned on both sides. Turn the heat to medium-low, cover, and cook for 25 minutes. Remove the lid, and increase heat to medium-high. Continue frying until chicken pieces are a deep golden brown, and the juices run clear. |
Beer Butt ChickenIngredients: 1 cup butter Preheat an outdoor grill for low heat. In a small skillet, melt 1/2 cup butter. Mix in 1 tablespoon garlic salt, 1 tablespoon paprika, salt, and pepper. Discard 1/2 the beer, leaving the remainder in the can. Add remaining butter, garlic salt, paprika, and desired amount of salt and pepper to beer can. Place can on a disposable baking sheet. Set chicken on can, inserting can into the cavity of the chicken. Baste chicken with the melted, seasoned butter. Place baking sheet with beer and chicken on the prepared grill. Cook over low heat for about 3 hours, or until internal temperature of chicken reaches 180 degrees F (80 degrees C). |
Garlic Cajun RibsIngredients: 1 1/2 gallons water Preheat grill for medium heat. In a large pot, bring the water to a boil. Season boiling water with 2 tablespoons garlic, 4 tablespoons Cajun-style seasoning, and 4 tablespoons seasoned salt. Boil ribs in seasoned water for 15 to 20 minutes. In a mixing bowl, mix together barbeque sauce, 2 tablespoons garlic, 2 tablespoons Cajun-style seasoning, 2 tablespoons seasoned salt, and Worcestershire sauce. Place ribs in large baking dishes, and apply a generous amount of the barbeque sauce mixture to the ribs. Set aside for 10 to 15 minutes to marinate. Grill the ribs for 7 to 12 minutes per side, until nicely browned. |
Non Labor Intensive BBQ SauceIngredients: 1 large onion, rough chopped In a food processor, combine the onion, garlic, chile and mince fine. Add the raisins and puree until smooth. Remove all and add to a saute pan to simmer with the rest of the ingredients for about 1 hour, add water as needed to keep it thick. Stirring often. Taste to adjust seasonings. Will keep for up to one month in the refrigerator. |
Blueberry Cherry DesertLabor Day wouldn't be complete without a selection of desserts to suit the season. Make the most of summertime fruits in your baking projects. Ingredients: 1/2 cup butter Melt the butter or margarine, and add 1 cup sugar and the graham crackers. Press this mixture into a 9x13 pan. Beat the eggs. Gradually beat cream cheese, sugar, and vanilla into the eggs. Pour egg and cream cheese mixture over the graham cracker crust. Bake at 325 degrees F (165 degrees C) for 15-20 minutes. Cool. Pour blueberry or cherry pie filling over the top of the baked dessert. Spread nondairy whipped topping on top of fruit. Refrigerate until ready to serve. |
