#1. A flavorful alternative to traditional buffalo wing recipes.
Ingredients:
24 chicken drumsticks
2 cups buttermilk
4 cups oil for frying
2/3 cup unbleached all-purpose flour
2/3 cup cornmeal
1 teaspoon coarse salt
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, or to taste
1/2 teaspoon garlic powder, divided
1/4 teaspoon onion powder
1 1/2 teaspoons Italian-style seasoning
1 stick unsalted butter
1 cup hot pepper sauce
Preparation:
Place the chicken drumettes and buttermilk in a large bowl. Soak drumettes approximately 30 minutes.
Heat oil in deep-fryer to 375 degrees F (190 degrees C).
In a medium bowl, sift together flour and cornmeal. Mix in coarse salt, black pepper, cayenne pepper, garlic powder, onion powder and Italian-style seasoning. Dip the drumettes in the flour mixture, then place in the hot oil. Fry until golden brown, 12 to 13 minutes. Remove from oil and drain on paper towels.
Melt butter in a medium saucepan over low heat. Blend in the hot pepper sauce. Remove from heat and use for dipping the fried drumettes.
#2.Best if these wings are served with blue cheese dressing.
Ingredients:
4 pounds chicken wings or thighs
salt and pepper to taste
4 cups vegetable oil
1/4 cup butter
2 teaspoons hot pepper sauce
1 teaspoon distilled white vinegar
Preparation:
Heat oil in a deep-fat fryer or large heavy pot to 375 degrees F (190 degrees C).
Cut off tips, and separate each wing at the joint. Sprinkle with salt and pepper.
Place half of the wings in the deep fryer. When the wings are golden brown and crisp, remove them and drain well. Salt wings to taste. Add remaining wings and repeat frying process. Once wings have drained a bit, place them in a large mixing bowl.
Melt butter or margarine in a small saucepan. Mix in hot sauce and vinegar. Pour melted sauce over the cooked wings, and mix to coat the wings with sauce.

Ingredients:

1/4 cup butter
1/4 cup hot sauce
1 dash ground black pepper
1 dash garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings
Preparation:
Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together.
#4. These fiery little chicken wings are basted in a hot-pepper sauce, then cooled with tangy blue cheese dip.
Ingredients:
1 cup vegetable oil
1 pound chicken wings
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1/2 cup butter
1/2 teaspoon hot pepper sauce
1 cup mayonnaise
4 tablespoons minced onion
3 cloves garlic, minced
1/3 cup chopped fresh parsley
1/2 cup sour cream
1 tablespoon lemon juice
1 tablespoon distilled white vinegar
1/2 cup blue cheese, crumbled
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Preparation:
Preheat oven to 350 degrees F (175 degrees C).Preheat oven to 350 degrees F (175 degrees C).
In a large frying pan or deep fryer, heat oil to 375 degrees F (190 degrees C). Fry wings for approximately 8 minutes. Transfer wings to a paper towel and let drain. Season with salt and white pepper. After the wings have drained, place them in a large mixing bowl.
In a small saucepan, melt butter or margarine. Stir in hot pepper sauce. Pour mixture over chicken wings, toss to coat the wings. Place wings in a baking dish.
Bake 15 to 20 minutes.
While the chicken wings are baking, make the blue cheese dressing: In a medium size mixing bowl, combine mayonnaise, onion, garlic, parsley, sour cream, lemon juice, vinegar and blue cheese. Blend the mixture well. Arrange the baked chicken wings on a serving platter. Serve with blue cheese dressing.
